Was machen mit keimenden Kartoffeln?<\/h2>\n

Wir kennen das alle: Du freust dich auf ein leckeres Kartoffelgericht, aber als du die Kartoffeln<\/a> aus der Kiste holst, haben sie angefangen zu keimen. Niemand m\u00f6chte gerne Nahrungsmittel vergeuden. Was solltest du tun, wenn die Kartoffeln gekeimt haben? Musst du sie entsorgen oder kannst du sie noch verwenden?<\/p>\n

Kartoffeln sind Nachtschattengew\u00e4chse und enthalten Solanin. Die bitter schmeckende Substanz ist leicht giftig und sollte nicht gegessen werden. Solanin entsteht durch Lichteinfall vor allem in und direkt unter der Schale und in den Keimlingen, au\u00dferdem enthalten die gr\u00fcnen Stellen der Knolle vermehrt Solanin. Wenn Du diese Teile gro\u00dfz\u00fcgig abschneidest, kannst du die Kartoffel noch verwenden. Erst wenn die Keime l\u00e4nger werden, muss die Kartoffel zwingend in den M\u00fclleimer, weil das Solanin dann vermehrt in die Knolle selbst wandert.<\/p>\n

Fr\u00fcher kamen Solanin Vergiftungen h\u00e4ufig vor. Wenn Du neue Sorten verwendest, ist die Gefahr einer Solanin Vergiftung heute \u00e4u\u00dferst gering. W\u00e4hrend alte Sorten Solaninwerte von 32,5 bis 55 mg\/100 g erreichen, liegen die Werte bei heutigen Z\u00fcchtungen bei 3 bis 7 mg\/100 g. Bei einer Konzentration von 200 mg treten erste Vergiftungssymptome auf, wie Benommenheit, Ber\u00fchrungs\u00fcberempfindlichkeit und erschwerte Atemt\u00e4tigkeit. Dazu m\u00fcsste ein Erwachsener 2,8 kg ROHER Kartoffeln essen (neue Sorten). W\u00fcrde man weiter Solanin zu sich nehmen, folgen \u00dcbelkeit und Erbrechen. Eine Konzentration von 400 mg und mehr gilt als lebensbedrohlich. Beim Kochen wird \u00fcbrigens ein Gro\u00dfteil des Solanins ins Wasser abgegeben. Das Wasser solltest du also nicht weiter verwenden.<\/p>\n

Durch angemessene Lagerung kannst du die Keimbildung und Entstehung von Solanin einschr\u00e4nken. Kartoffeln<\/a> sollten immer dunkel gelagert werden, idealerweise bei einer Temperatur von acht Grad. Bei h\u00f6heren Temperaturen fangen sie leichter an zu keimen. Leider verf\u00fcgen unsere modernen Stadtwohnungen nur selten \u00fcber eine Speisekammer oder einen k\u00fchlen Keller. Manche behelfen sich, indem sie die Kartoffeln im Fr\u00fchjahr und Herbst dunkel abgedeckt auf dem Balkon lagern.
